Butter Lettuce & Envy Apple Salad recipe with vinaigrette

Hi everyone..I am back with yet another exciting post for all of you. Today I’ll be sharing a Butter Lettuce & Envy Apple Salad recipe with vinaigrette. Salads can be creative, easy to prepare, healthy and make a perfect fulfilling meal. I love experimenting with my salad recipes every now and then.   I try to give salads the importance they deserve and I hope my salad recipes can inspire all of you to try them.

Apple salad

This weekend I prepared a mouthwatering salad with an unexpected blend of both the worlds of fruits and veggies along with a vinaigrette dressing to toss some zing.

The recipe is colorful, has some great textures, and is perfect for any time of year. I used my favorite Envy Apples in this recipe which make this recipe super delicious.   The recipe has got a good amount of ingredients, but I promise it’s easy to prepare.

Moving over to the recipe:

Envy Apples recipe

Salad recipeServes: 2-3

INGREDIENTS

1/2 cup Envy apples, cubed

1/2 cup pineapples, cubed

1/2 cup oranges

1/2 cup chopped strawberries

1/4 cup chickpeas

1/4 cup broccoli

1/2 cup cucumber

1/2 cup corn

1/4 black olives

1/4 cup carrots

1/2 cup butter lettuce

1/4 cup spinach

1/4 feta cheese

For the vinaigrette

1 tablespoon apple cider vinegar

2 tablespoons olive oil

1 tsp Dijon mustard

20 turns of freshly cracked pepper

1/8 tsp salt

INSTRUCTIONS

1. In a large bowl, place the butter lettuce and spinach.

2. Combine other ingredients in another bowl i.e. all the fruits, carrot, corn, chickpeas,olives, broccoli. Now add this to the large bowl containing your lettuce.

3. For the dressing take a small bowl, whisk together all the ingredients

4. Before serving pour the dressing over your salad and toss.

5. Top with  feta cheese and enjoy (Optional)

Envy Apple Salad with vinaigretteNotes: If you are a person who does not enjoy raw vegetables very much, you can just increase the portion of fruits and skip the vegetables. I love this recipe especially because its easy to make and super healthy.  Love the rainbow of colors and its rich in antioxidants.
